Hollandaise Sauce

Serves 6, unless like me, you could drink the stuff

2T unsalted butter
6 egg yolks
1/2c boiling water
2t lemon juice
1/8t cayenne
salt

-whisk butter and egg yolks over med heat with 1/2 inch simmering water in pot under bowl
-slowly add water and thicken
-off heat, add lemon and cayenne
