1 T veg oil
1 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped yellow pepper
1 close garlic minced
2 lbs ground turkey
14.5 oz can diced tomatoes
2 cups pumpkin puree
1/5 T chili powder
1/2 t black pepper
salt
heat oil in skillet
saute onions, peppers and garlic until tender
stir in turkey, brown and drain
mix in tomatoes and pumpkin
season with chili, salt and pepper
reduce heat to low, cover and simmer 20 minutes.

Pumpkin Turkey Chili
1 T vegetable oil,
1 cup chopped onion,
1/2 cup chopped green bell pepper,
1/2 cup chopped yellow bell pepper,
1 clove garlic minced,
2 lbs ground turkey,
1 (14.5 oz) can diced tomatoes,
2 cups pumpkin puree,
1.5 T chili powder,
1/2 t ground black pepper,
1 dash salt
heat oil, in a Large skillet (larger than the one Kate used...)
saute onion, peppers, and garlic until tender.
stir in turkey and cook until brown.
drain and mix in tomatoes and pumpkin.
season with chili powder, cinnamon salt, and pepper.
reduce heat to low, cover and simmer 20 mins.
serve with cheddar cheese and sour cream.

Fresh Gazpacho, no processed food
3-4 cups tomatoes with their juices. (fresh with skins)
4ish cups cucumbers.
1 pepper- green, red, yellow, or orange.
6 cloves of garlic
1-2 tablespoons of lemon juice
1 teaspoons salt (or to taste)
1 tablespoon dried oregano or basil or both.
Instructions:
1. Blend together the tomatoes, cucumbers, and peppers.
2. Add the cloves of garlic, one at a time, tasting the mixture, and stopping when you like the amount of garlic.
3. Add the rest of the ingredients as needed.
4. Serve chilled.

Asian Slaw
4 servings
4 cups of shredded cabbage (red and green)
1 cup shredded carrots
1 small onion finely chopped
pinch of salt and pepper
1 1/2 T rice vinegar
1/3 cup fat free mayonaise
1 1/4t sesame oil
1/2 t sriracha (hot sauce)
1/4 t sugar (optional)
1T sesame seeds
-toss cabbage, carrots, onion and salt in bowl, add pepper
-whisk together wet ingredients
-pour over veggies and toss, can be chilled
-sprinkle sesame seeds over as garnish before serving

Garlicky Peanut DIp
1 small onion
2T olive oil
¼ c sunflower seeds
3 garlic cloves
2/3 c water
1/3 c creamy peanut butter
3T brown sugar
2T reduced sodium soy sauce
¼ t cumin
¼ t pepper
Dash cayenne
Assorted veggies to dip
Can be served warm in mini crock pot
2T olive oil
