Snickerdoodles

2 eggs
2/3 cup oil
2 tsp. vanilla
3/4 cup sugar
2 cups flour, sifted
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon -or- 2 tsp. grated lemon rind
1/2 cup sugar, for rolling

Heat oven to 400°F.  Beat eggs with fork, stir in oil, vanilla and lemon rind (if using). Blend in 3/4 cup sugar until mixture thickens.  Blend flour, baking powder, and salt; add to mixture.  Place on baking sheet, criss cross with fork. Place 2 inches apart on ungreased baking sheet.  Bake 8-10 minutes. Remove immediately from baking sheet.

Apple Crisp

This is awful...I have officially become my grandmother.  Good luck:

-Enough apples to layer over the bottom of a dish.  Let's say a 6 inch square pyrex caserole dish so about 5 medium apples sliced and peeled.
-I squirt some agave nectar and maple syrup on the apples, maybe 1 T each
-Sprinkle seasoning and add other stuff: nuts, craisins, raisins, chocolate chips.  Cinnamon, nutmeg.
-I added a little brown sugar, about 2T

Topping:
-1/4 cup gluten free flour
-1/2 cup (maybe a little more) gluten free oats
-1/2 stick butter melted

-Bake 45 minutes at 350...serve with ice cream

BBQ Sauce

2 T oil
1T worstershire sauce
1T sugar
1/2 t salt
2t vinegar
1/2 c water
1c chili sauce

White Bread

1T shortening
1T salt
2t sugar
1 yeast pkg
2c water
6c flour

-heat 1 cup water, add shortening, salt and sugar
-cool with 1 cup water
-add yeast dissolved in water
-add remaining flour
-knead 10 minutes on 4 speed
-rise to double
-bake 400 25-30 minutes

Vermont Rhubarb Cobbler

-Cut 1 inch pieces of rhubarb, 4-5 cups
-sprinkle with 1 cup sugar and
-mix with 1T cornstarch
-Cover with 1 large can of pineapple

Topping:
1/3 cup butter
2/3 cup sugar
1t grated orange
1t vanilla
1c flour
1t powder
1/4 t salt
2/3 cup milk

Gramma Rita's Cinnamon Rolls

4 cups flour
5 T yeast
1/2 cup sugar
-mix dry

2 cup milk and lump butter warmed

feed dry into liquid with some salt

don't use all flour, kneed some and let rise 2+ hours

-roll out and coat with butter, cinnamon and brown sugar
-cut and let rise another hour

bake 15 minutes-ish at 375

Carrot Ginger Soup

1 large onion, chopped
6 T butter
1/4 cup fresh ginger
8 cups chicken stock
1 1/2 lbs carrots
2 T lemon juice
2 T curry
S&P

-Melt butter over medium heat
-Add onion, ginger and garlic and saute 15-20 minutes
-Add chicken stock and carrots heat to a boil
-Reduce heat and cook uncovered until carrots are tender
-Put in food processor and puree
-Add lemon juice, curry and S&P

Sweet Potato Burgers

2 cups coarsely mashed sweet potatoes (about 2 lg potatoes)
2 bulbs roasted garlic
1 c cannellini beans (rinsed and drained)
1/3 cup oat flour
1 lg egg
1.5 t onion powder
1 t salt
1/2 t pepper
1/8 t cumin
2-3 tablespoons olive oil
1 avocado sliced
2/3 c plain greek yogurt
1 t maple syrup

buns (optional)

-pierce potatoes with fork and nuke 5 minutes + per side, slice and cool to scoop out flesh

-In a large bowl mash beans, add potato and spices, garlic, egg, panko and flour and mix well
-Let sit in fridge 15-20 minutes

-Meanwhile, combine yougurt, syrup and garlic and set aside.

-heat a large skillet to medium and add 2 T olive oil
-form patties and cook til hot, wait until golden as can be a little wet

I would find more dry ingredients as these are fantastic but really wet.  Also I may bake them next time.

Baked Cheese and Broccoli Patties

2 t veg oil
2 cloves garlic - minced
1/2 onion chopped
12 ounce bag frozen broc - defrosted
3/4 cup panko breadcrumbs
1/2 cup sharp cheddar
1/3 cup parm cheese
2 eggs beaten
S&P

-preheat oven to 400
-lightly grease baking sheet lined with foil
-heat oil in small pan on med heat and add garlic and onions and S&P
-set aside

-dry broc in towel and squeeze out moisture
-mix with garlic and onion mixture
-add panko, cheeses, eggs
-form patties and place on baking sheet
-bake 15 minutes each side til cripsy

Hermit Cookies

1 c molasses
1/2 c sugar
1/2 c melted shortening
1/2 c hot water
1 c raisins
3 cups flour
1 t soda
1 t cinn
1/2 t cloves
salt

mix and spread in rows 375

Cranberry Bread

2 loaves

1 c shortening
2 c sugar
4 eggs
2 t vanilla
4 c flour
2 t soda
2 t powder
1 c nuts (optional)
2 c dried cranberries
2 cups sour cream

bake 350

Crock Pot Pork Loin

2-3 lbs of pork loin
16 ounce can cranberry sauce
1/2 c cran juice
1/4 t clove
1/2 c sugar
1 t dry mustard
2T corn starch
2 T cold water

-loin in pot
-med bowl combine: cran sauce, sugar, juice, mustard and clove
-add and cook 6-8 hours on low
-remove and skim fat
-can make gravy from drippings with corn starch

Sweet Garlic Dill Pickles

makes 6 pts = 3 qts

2 c vinegar
2 c water
2 c sugar
2 T kosher salt

boil all 3-4 mintues

-in each jar put 2 small garlic buds and 2 sprigs dill
-scrub cukes well and slice
-cover in brine
-process 5 mintues

Boston Baked Beans

1 lb  of pea beans soaked over night
2 qts beef stock
3 T ketchup
1 t mustard
3/4 c brown sugar
S&P
little vinegar

crock pot on low overnight

Cranberry Chicken

1 lb boneless chicken
2 T flour
2 t ginger
S&S to taste
3 T butter
1/4 cup OJ
8 ounces cran sauce
2 T honey

-mix flour, ginger, S&P
-coat chix and brown in butter
-melt butter, flour and mix in cran, oj and honey to sauce and put chicken in pan, simmer 20 mintues

Gingerbread

1/2 c spry
3/4 t salt
1 1/4 t cinnamon
1t ginger
1/4 t nutmeg
3/4 t clove
1/2 c sugar
1 egg beaten
3/4 c molasses
2 1/2 c flour
1/2 t powder
1 t soda
1 c boiling water

-blend spry, salt and spices
-add sugar and egg...beat well
-add molasses
-sift in flour, soda and powder
-add water last
-bake 45-50 at 350 in 8x8 pan

Chicken Corn Tortilla Soup

2 split chicken breasts
5 cups chicken broth
1 large onion chopped
4 corn tortillas coarsely chopped
16 oz package of frozen corn
4.5 ounce of diced green chiles
1/2 cup sour cream
3 T chopped cilantro
1/2 t garlic salt
1/4 t ground red pepper

-bring chicken, broth, onion and tortillas to boil in large pot
-simmer, stirring occasionally for 1 hour
-remove, bone and chop chicken
-stir in chicken and remaining ingredients

Swedish Coffee Bread

-1 package yeast with 1/4 cup warm water to foam

-3/4 cup butter
-2 cup milk
-heat on stove

-add 1 cup sugar and mix off stove

-2 eggs
-pinch salt
- 6.5-7 cups flour
-1.5 cups on table to roll

-rise to double in warm air (2-3 hours)
-kneed and make braids
-rise to double in size
-beat an egg and brush
-bake 350 45 minutes

Crock Pot Balsamic Chicken



Ingredients

1 teaspoon garlic powder...
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons dried minced onion
4 garlic cloves, minced
1 tablespoon extra virgin olive oil
1/2 cup balsamic vinegar
8 boneless, skinless chicken thighs (about 24 ounces) or breasts
sprinkle of fresh chopped parsley

Directions

Combine the first five dry spices in a small bowl and spread over chicken on both sides. Set aside. Pour olive oil and garlic on the bottom of the crock pot. Place chicken on top. Pour balsamic vinegar over the chicken. Cover and cook on high for 4 hours. Sprinkle with fresh parsley on top to serve.

Berries and Cream Muffins

2 1/2 cups oats (I use Red Mills)
1 cup Fat Free Greek Yogurt
2 eggs
1/4 cup Splenda
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 cups blueberries

Combine everything but berries in food processor and blend til smooth.  Put in a bowl and add berries.  You can use any berries, original recipie used strawberries.  Bake at 400 for 25+ minutes.  Use either tin baking liners or silicone liners.

Broccomole

Sounds gross...I love this and can easily (and have) eaten a whole bowl. 

  • 3 cups chopped broccoli
  • 1 jalapeno, chopped, seeds removed
  • 2 tbs green onions
  • 2 ounces fat free greek yogurt
  • 1/4 tsp chili powder
  • 1 tbs cilantro
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
Instructions
  1. Over cook broccoli and drain.
  2. Transfer to a food processor. Add the remaining ingredients and process until smooth.
  3. Serve warm

Katherine Hepburn's Brownie Recipe

Ingredients

  • ½ cup cocoa or 2 squares (2 oz.) unsweetened baker's chocolate
  • 1 stick (1/2 cup) unsalted butter
  • 1 cup sugar
  • 2 eggs
  • 1/4 cup flour
  • 1 teaspoon vanilla
  • Pinch of salt
  • 1 cup roughly chopped walnuts or pecans

Directions

  1. Melt butter with the cocoa or chocolate together in a heavy saucepan over medium low, whisking constantly till blended.
  2. Remove from heat and stir in the sugar.
  3. Whisk in the eggs and vanilla.
  4. Stir in flour, salt and walnuts. Mix well.
  5. Pour into a well buttered 8-inch square baking pan.
  6. Bake at 325 degrees for about 40 minutes till a toothpick inserted in the center comes out clean. Cool completely and cut into squares.

These brownies are very fudgy and may be somewhat difficult to slice cleanly; use a sharp knife and a spatula to help them loosen from the baking dish.
