Red Velvet Cake

2 1/2 c self rising flour
1t baking soda
1 1/2c sugar
1 1/2c veg oil
2 lg eggs, lightly beaten
1t white vinegar
1t pure vanilla extract
1c whole buttermilk
2 1/2 red food coloring

-heat oven to 350 and spray 3 9in rounds and line with wax paper
-sift flour and soda, set aside
-combine sugar, oil, eggs, vinegar, vanilla and beat until fluffly white
-gradually add flour mixture
-slowly add buttermilk
-add coloring
-fill pans 1/2 way, bake 30 minutes
-cool 5 minutes, frost and layer
